I'm going to go outside now - in shorts, in a smaller city of 1 million people, and enjoy a beautiful day; sans ice fishing :) As a Canadian, I just have a few things to say

(Ice fishing? Igloos? Yawn). I don't find them offensive because a)none of it is true, unless you go into the vast northern regions of the country where 95% of Canadians would never brave to go anyhow and b)it really is pretty unoriginal. I once met some guys from Boston while in Cape Cod who asked if it would be snowing immediately when we crossed back over the border or if you had to drive for a bit first (this was in August). Anyhoo....these stereotypes don't really bother me I have to say. People find it funny? That's cool - Canada's awesome and if people enjoy joking about it I don't mind. I have to say the Canadian jokes on How I Met Your Mother always kill me, but that's because I suspect a lot of the writers ARE Canadians poking fun at the misconceptions.
